WHO SAYS EATING HEALTHY ISN’T FUN & DELICIOUS? Check out this AMAZING DISH.

I have been eating healthy for about 14 years.  Somewhere along the way I decided that if I was going to continue to eat healthy and get results, I needed to enjoy this “eating healthy thing”.  That is when my quest to finding a way to getting results (while dieting) and enjoying it.

As of that moment, all I knew is that there was no way I could eat grilled chicken, plain broccoli and sweet potatoes every single day, without being miserable.  I say this because home girl over here LOVES TO EAT! And I have absolutely no problem saying it.  I LOVE FOOD! I was definitely never that girl that was taken out on a date and just had “a salad”.  But I can say that today, because I truly enjoy eating healthy food and some sinful food once in a while (in moderation).

After many years of searching for ways to “eat right” without feeling deprived, my PASSION for cooking began. I started to watch cooking shows, I bought cooking magazines and books, and I began to teach myself how to cook healthy.  And that is when I found the solution.  Make healthy food taste really good, eat something different all the time, and enjoy eating healthy.

And that is what I live by today!  I can truly stand before you and say I LOVE TO EAT HEALTHY! I enjoy “dieting if you want to call it that”, I never feel deprived a day in my life, and I can get great results while eating yummy food!  Sounds good huh?

I never feel like I need a cheat meal because I feel satisfied all the time. Does that mean I don’t enjoy life and eat some cookies or brownies once in a while?  Nope!  I ate some really good chocolate chip cookies this weekend (in moderation, of course).  But overall, I enjoy every single meal I have.

Now don’t get me wrong, it’s not a walk in the park either.  I do need to have WILL POWER and make sacrifices, but hey nothing in life worth having comes easy!  What I mean by this is, though it sounds like it’s easy to eat healthy and I enjoy it, I still have to say NO to many things I’d like to have.  But with a little planning and preparation, it’s a lot easier to have strong WILL POWER.

The other day I made the most delicious dish, I couldn’t believe how good it was.  I thought to myself….. There is no reason or excuse for people to not eat right, when you can enjoy it so much.  I thought this as I happily devoured my dinner.

It was brown rice pasta with roasted chicken, roasted butternut squash, with fresh basil, toasted walnuts and a tiny bit of crumbled goat cheese to give it some creaminess.  HOLY MOLY was it good.

It feels so good to be able to enjoy the journey of GETTING RESULTS. It feels good to enjoy every meal I have.  It feels good to never feel like I need to binge.  It feels good to know I am eating healthy meals and feeding my family healthy meals all the time.  It feels good to know I always have a plan and I am always prepared.

And you can feel good about all of this too!!!  All you have to do is take the time to plan, prepare, and GET COOKIN’! If you do, I promise you a lifetime of eating healthy and being happy!  This does't mean you have to be a SUPER CHEF, you don't even have to know how to cook to do this.  If you can follow instructions, you can cook.  And if you think you hate it, just try it, you may surprise yourself and realize not only are you pretty good, but your food tastes good too.
