Veggie Quiche Recipes- Easy & Healthy Recipes

Here are the yummy Veggie Quiche Recipes I promised you!

There are 2 versions, so try them both and also feel free to play around with the recipes and create your own. I would love to hear about them, so make sure to come back and post your comments or ideas.

French Veggie Quiche (12 Servings)

Ingredients:
  • 1 package sliced Portobello mushrooms, chopped
  • 1 container pimentos, rinsed and drained
  • 1 can artichoke hearts, chopped, rinsed and drained
  • ½ cup green onions, chopped
  • Herbes de Provence to taste
  • 4 whole eggs
  • 8 egg whites
  • Goat cheese to taste
  • 1/4 cup shredded low-fat cheddar cheese

Instructions:
Preheat oven to 350 degrees. In a large skillet with a little stock, sauté all the veggies and herbes de provence until softened. In a large bowl, whisk all the eggs and add the veggies. Fold in the cheeses and pour into a muffin pan. Bake for 25 minutes or until golden brown.

Italian Veggie Quiche (12 Servings)

Ingredients:
  • 1 10oz container of chopped frozen spinach
  • 1 yellow squash, chopped
  • 1 zucchini, chopped
  • ½ red pepper, chopped
  • Italian Seasoning to taste
  • Garlic powder to taste
  • 4 whole eggs
  • 8 egg whites
  • Parmesan cheese to taste
  • 1/4 cup shredded low-fat mozzarella cheese

Instructions:
Preheat oven to 350 degrees. In a large skillet with a little stock, sauté all the veggies and herbes until softened. In a large bowl, whisk all the eggs and add the veggies. Fold in the cheeses and pour into a muffin pan. Bake for 25 minutes or until golden brown.

These are great healthy recipes that are good for a quick breakfast or an on-th-go snack!  They are good warm and they are also good cold!  You can add some shredded potatoes or sweet potatoes for some healthy carbs.
