RECIPE FOR CRUNCHY FRUITY TUNA SALAD

Here it is, the recipe I promise you from yesterday.  This is a great, super easy healthy recipe to make.  I make it all the time and keep it in my fridge to munch on for snacks or meals.  You can also make this with roasted turkey or even chicken and keep all the same ingredients.

CRUNCHY FRUITY TUNA SALAD RECIPE

Ingredients:

4 cans of tuna

½ cup low-fat cottage cheese

1 tbsp Dijon mustard

2-3 celery stalks, chopped

3 scallions, chopped

½ cup red onion, chopped

¼ cup sliced almonds, toasted

¼ cup dried cranberries

Instructions:

Mix all ingredients in the bowl except for almonds and berries.  Once all ingredients are well incorporated, fold in the almonds and berries.  You can serve this over a bed of arugula or spinach.
