The other night I was getting ready to make dinner......as Nicholas ran around the house making a mess EVERYWHERE! And I stopped for a second to think of what my next day was looking like.
I had an appointment at 3pm the next day which meant I would not have much time to cook dinner that day. So knowing that I made a whole other meal while I made that nights dinner. I was making my super fast go to meal, Walnut Chicken with Wild Rice and Roasted Veggies. So since the oven was already on, I threw in an extra 4 pieces of chicken with a little Mrs. Dash Seasoning and baked them so that we could have that for dinner the next night. I also made extra rice, and a ton of veggies.
And thank God I did, because the next day, by the time I got off work, fed Nicholas and put him to sleep, all I had time for was a quick shower before I had to go. Before I left for my appointment, I set up all our dinners in plates. All I had to do is take it out of the fridge and plate it. It took me no more than 5 minutes to get dinner ready. I also, packed myself an apple and some cashews to take to my appointment so that I wouldn't get hungry and want to grab some of the hershey kisses that the doctor has in her office!
While I was doing all of this I was thinking to myself......... There is no excuse for people to not stick to their nutrition programs. If you would just take a few minutes to plan and prepare, you would eat better 75% of the time. So maybe you don't have time to spend 3 hours in the kitchen prepping and cooking for all week. But what I did the other night took me no more than 30 minutes to get 2 days of lunches and dinners cooked.
Oh and by the way, since I had roasted so many veggies, I set some aside and scrambled 4 eggs and 8 egg whites and mixed them together with a dash of Parmesan Cheese (the real stuff). I put this mixture in a muffin pan and voila Veggie Quiches for snacks for the week, and all while making dinner.
You can do this! I know you can! You just need to invest a few more minutes a day into planning.
