This weekend we celebrated Easter at my brother-in-law's home. We were invited to celebrate Easter with a MEXICAN FIESTA!
You can imagine what kind of food is served at a Mexican Fiesta.
Since I had already indulged on Friday night with Danny on date night, I knew I did not want to eat badly. I was told to bring my favorite mexican appetizer so I made a delicious CHARRED CORN GUACAMOLE! It's healthy and to die for, it's so good! So I knew I would be good with that, but what else would I eat.
I couldn't bring a tupperware of food, I mean they already think I'm crazy, and it's EASTER. So I just trusted myself to make the best possible choice.
The table looked like this...................
There were home made black beans, crispy taco shells, soft and warm tortillas, yellow rice, cheese, sour cream, etc. But amidst all these yummies, there was also, lettuce, tomatoes, red onions, cilantro. So I made the best possible choice and it was DEEEEEELISH! I scattered a ton of lettuce on my plate, topped it with tomatoes, red onions, cilantro, and some shrimp that was left over from a ceviche appetizer. I placed a little guacamole on top, a little salsa and a tiny bit of cheese. I made myself the best salad. I didn't even care that people were munching away on their fried crispy tacos. I was really enjoying myself.
You see, my friend, it's all about making the BEST POSSIBLE CHOICES. It could have been easy to say "oh well, mexican is all there is, I guess I will just eat a few tacos." But there is always a way to make a better choice, and if you are in the right frame of mind and you are committed to your health and fitness, you will opt for better choices.
Again, I will remind you........ I am not some crazy girl that can't enjoy a taco. I live by MODERATION, but I make choices. I splurged on Friday, so I chose to eat well the rest of the weekend. Had I not splurged on Friday, home girl over here would have probably had a few tacos. Even though I have to say that salad was soooooooo good, I just may have still had that DEEELISH salad!
