Healthy Recipes: Spinach Turkey Meatballs
Ingredients:
2 egg whites
¾ cup fat-free shredded mozzarella cheese
¼ cup reduced-sodium Parmesan cheese
1 slice of Ezekiel, Spelt, or whole-wheat bread, food processed or blended into bread crumbs
¼ tsp garlic powder
¼ tsp ground black pepper
1 10-ounce package frozen chopped spinach, thawed and well drained
1 lb uncooked extra lean ground turkey
Instructions:
Preheat the over to 350 degrees. Line a cookie sheet with foil and set aside. In a large bowl, combine egg whites, mozzarella and parmesan cheeses, bread crumbs, garlic powder, and pepper. Stir in the spinach, add the turkey and mix well. Shape into meatballs and place on the lined cookie sheet. Bake for about 20 minutes or until they are no longer pink.
Serve them over brown rice or brown rice pasta with a lemon, wine, stock, and parsley reduction.
