have told you several of times how important it is to get your veggies in!!!
Not only are they packed with vitamins and nutrients, but ingesting them causes your body to burn tons of calories.
I know, I know……. It can be tedious to prepare veggies everyday! I know how you feel. You work, you have kids, you have to clean, cook, and chicken and rice will have to suffice.
I also work (a ton), no kids yet, but work, hubby, clients, and the house keep me busy enough. So trust me, I understand how you feel.
But it doesn’t have to be so tedious. I am going to give you a quick tip on how to get your veggies in all week by only cookin’ once!
Ready?
Roasted Veggies
• Pre-heat the oven to 400 degrees F
• While the oven preheats, chop your favorite veggies and put them on a big cookie sheet lined with aluminum foil. Fill the entire sheet with tons of your favorite veggies.
Here is my favorite combination: Eggplant, Portobello mushrooms, Asparagus, Red onion. I sprinkle fresh cracked pepper and chopped fresh rosemary.
• Sprinkle pepper and your favorite fresh herbs (rosemary, thyme, sage, marjoram, basil, oregano, or any sodium-free seasoning).
• Place the cookie sheet in the oven and roast for 15-20 minutes.
• Once they come out of the oven, let them cool completely and store in a big Tupperware.
Then, throughout the week all you have to do is JAZZ them up! Here are a few tips!
• Add toasted nuts.
• Add a little crumbled or shredded cheese: goat, feta, gorgonzola, cheddar, swiss, etc.
• Add a balsamic glaze (boil the vinegar with any low-sugar preserves)
• Add your favorite vinaigrette.
• Add them to a salad.
• Add them to a stir fry of chicken and brown rice.
• Serve them a top a bed of sautéed spinach.
See, all you have to do is invest the time early on in the week, and then you can have your veggies in all kinds of different ways. It’s simple, and worth it! So, get up now, go to the kitchen, grab your favorite knife and cutting board, and get COOKIN’
