Want a sneak peak at what was going on in my kitchen on Monday as Nicholas napped??

This is what I usually do on Mondays and Wednesdays! I cook for a few days so that on Tuesdays and Thurdays MOMMY (ME) can get some work done! So whether you are a mom or not, if you are simply just busy all the time, here are a few tips to make your LIFE EASIER!
It’s about 2pm and baby finally fell asleep.
I turned the oven on and went to town in my awesome kitchen!
Here is what I made: (this is just for my husband and I, 2 people)
- 1 tray with 8 chicken breasts with grill seasoning. On the side, cherry tomatoes and shallots.

- 1 tray of chopped veggies (eggplant, zucchini, squash, red onion, red pepper, mushrooms), this took about 5-6 minutes to chop.

- Since I was already chopping veggies, I chopped avocado, cilantro, red onion and tomatoes with lime juice to add on top of half the chicken that was baking.
- While those 2 trays were cookin' I made a batch of PROTEIN MUFFINS(24). I freeze 12 and keep 12 in fridge for the week. This takes abou 5 minutes to assemble. Then put them in the oven. I mean the ovens already on, I might as well make the muffins.
- While the oven is going crazy, I cooked 3 cups of BROWN RICE.
- While the rice is cooking which takes about 25 minutes, I made cannelini beans with herbs, this was for the tomatoes and shallots that were roasting, and the other half of the chicken that was in the oven! Soooo YUM AND EASY!
- Then I said, I have one more burner open, I might as well make Nicholas his food for a few days. So I made him ORGANIC WHOLE WEAT PASTA with low sodium chicken stock, organic cheddar cheese and cottage cheese.
All of this was cooked and kitchen cleaned up in 1 hour! YES MY FRIENDS, I kid you not!
Now I have Dinners and lunches for a few days, I have veggies for the whole week, brown rice for a few days, muffins for breakfast or snacks, and 2 delicious chicken dishes.
You too can do this, if you just ORGANIZE yourself, and COMMIT.
I know its hard to juggle being A WIFE, A MOM, A CAREER WOMAN, FRIEND, ETC. But you can do it.
Cuz if you do, you will have more energy for your little ones, you will feel good about yourself, and you will look amazing.
Its worth it!
