A challenge in which you commit to your own goals and do everything you can until you reach it! I know……easier said than done! These tips will help you get started.

Whether you did the challenge or not, if you attempt the tips below, you will “get”or “continue to get” amazing results, and the best part……YOU WILL ENJOY THE PROCESS!
• Take the time to plan a menu for the entire week.
• Do a little RESEARCH: look for recipes that are healthy & tasty: look in cooking magazines, cook books, online, etc.
• Take the time to cook: this doesn’t mean a ton of time in the kitchen. Just a few minutes and key ingredients can turn a bland and boring meal into a “RESTAURANT STYLE” meal. This time investment is soooooo worth it!
Here are 2 examples of QUICK, EASY, HEALTHY, & DELICIOUS MEALS
Caribbean Fish Salad (2 servings)
Ingredients:
2 fillets of your favorite white fish, rub with grill seasoning
1 nectarine, diced
1 red pepper, diced
½ cup scallions, chopped
¼ cup cilantro, chopped
½ cup low-sodium chicken broth
1 tsp natural peanut butter or 1 tbsp almond butter
1 tbsp rice wine vinegar
Juice of 1 lime
2 cups arugula
¼ cup almonds, chopped
Instructions:
Grill the fish until desired doneness, dice and place in a medium bowl. Chop all the veggies through the cilantro and add to the fish bowl. In a separate bowl whisk together the chicken broth, peanut butter, vinegar, and lime juice, sprinkle with pepper and pour over the fish and veggies. Add almonds, fold together and serve over a bed of arugula.
Spinach & Turkey Meatballs (4-6 Servings)
Ingredients:
2 egg whites
1/2 cup low fat or fat-free mozzarella cheese, shredded
4 tbsp Reduced-Fat Parmesan Cheese
¼ tsp garlic powder
¼ tsp ground pepper
1 10-ounce package frozen chopped spinach, thawed
1 lb extra lean ground turkey
Instructions:
Preheat oven to 350 degrees F. Line a cookie sheet with foil. In a large bowl, combine, egg whites, mozzarella cheese, Parmesan, garlic powder, and pepper. Stir in the spinach. Add ground turkey and mix well. Shape mixture into small meatballs and place them on cookie sheet. Bake about 20 minutes or until meatballs are no longer pink.
