Healthy Recipes: Curried Chicken Salad

I get tons of emails daily from people asking me for more and more “HEALTHY RECIPES”.  I totally understand why!  I mean, it is close to impossible to stick to any “Diet” when you are eating BLAND & BORING food all day long.

The key to LOSING WEIGHT & KEEPING IT OFF, is eating a healthy meal every 3-4 hours.  Doing it is the hard part, but only because people don’t take the time to cook DELICIOUS, TASTY, HEALTHY meals.  If you do, then you will lose weight and not feel like you are on a diet.  Below is an example of a great recipe, so be sure to scroll down and get the recipe.

Michelle Marie’s Healthy Recipe of the Day

Curried Chicken Salad with Nectarines (4-6 Servings)

Ingredients:
3 cups shredded cooked chicken breast
2 cups cubed nectarine (2)
½ cups diced celery
1/3 cup chopped green onions
¼ cup fat free cottage cheese
2 tbsp fat free half and half (Land O Lakes)
1 tbsp fresh lemon juice
½ tsp salt
½ tsp curry powder
¼ tsp pepper
4 tbsp sliced almonds, toasted
Instructions:

Combine first 4 ingredients in a large bowl.  Combine cottage cheese and next 5 ingredients in a food processor and pulse until creamy.  Drizzle mixture over chicken mixture and toss gently.  Sprinkle with almonds and serve.
