Nutty Pear Chicken ( 4 Servings)
Ingredients:
4 chicken breasts, chopped
2 garlic cloves, minced
2 tsp fresh rosemary, minced
2 shallots, minced
3 pears, peeled, cored, diced
½ cup walnuts, toasted and chopped
3-4 tbsp balsamic vinegar
2 tbsp honey
1 tbsp lemon juice
Instructions:
In a sauté pan, add a little broth, sprinkle the chicken with grill seasoning and cook until browned. Set aside. In the same pan, add a little more broth and sauté the shallots, garlic, rosemary, and pears. Cook until done. Add the chicken back in the pan, and fold in with the veggies. Add in the honey, vinegar and lemon juice. Mix well and top with walnuts.
