Eating healthy consistently is not that hard when you eat something different all the time, you enjoy what you eat, and you don't feel deprived. Easy to say huh? Much harder to live it!

I decided to eat RIDICULOUSLY CLEAN for 3 weeks and then I am going to take some pictures for my next book.  So I have been playing around with healthy recipes to make them as healthy as I possibly can.  So I took a basic turkey chili recipe and added a ton of veggies to it.

I love making ground turkey because its fast, easy and yummy and so versatile so I make it about twice a week.  Another thing I love is Mexican Flavors and Mexican Food......yeah guacamole and chips.....yum lol, hey I'm human and yes I love me some guac and chips. Anyhow, this dish is like a turkey taco minus the taco shell, but its so good that you won't even miss the taco shell.

Even in the summer months here in South Florida, sometimes its gloomy and rainy and all I feel like is COMFORT.  What I really feel like doing is getting under the covers with a good cup of coffee and some chocolate chip cookies and sleep all day. LOL But since I can't and shouldn't do any of those, I settle for a good ol' bowl of comfort (in a healthy way).

Weeknights are always so busy.  Especially dinner time because in a short amount of time I have to feed, bathe, bottle and put nico to bed....yikes!  So it is really great to have some quick go to healthy recipes that are simple, yummy and easy to make.

I love no-cook meals.  You know, those types of meals that you can make without turning the stove on.  I love them because they are fast and clean up is quick.
