Today is a new day, and though things are not yet resolved, I choose to make it a GREAT & POSITIVE day. I choose to see the light even if I feel like there is none right now! I choose to have FAITH and know that daily things will get better.
I have an appointment today at 3pm. By the time I get home it will be 5pm and I will not have the energy to make dinner. So I put Nicholas to sleep and cooked up dinner in 20 minutes. This is what I expect you all to do. I know that life gets tough and busy sometimes, but with a little planning and preparation, you can still accomplish your fitness goals. Life getting tough and busy is not an excuse for getting off track or gaining weight or not getting better.
Today I made a DELICIOUS Summer Veggie Baked Ziti. Yes my friends, PASTA! Brown rice pasta of course and filled with FRESH SUMMER ORGANIC VEGETABLES, and ground turkey. Stay tuned as I may surprise you with this TO-DIE recipe this week. As for now, here is my CHICKEN APPLE CHILI.
This recipe is in a Crock Pot:
MICHELLE'S CHICKEN APPLE CHILI
Ingredients:
2 lbs chicken breast, cubed
1 onion, chopped
1 red apple, chopped (make sure this especially is organic, as apples are the #1 fruit/veggie high in pesticides right now).
1 can organic cannellini beans (rinsed and drained)
Grill seasoning
4 tsp chili powder
4 tsp cumin
Organic Low sodium chicken broth
1/3 cup cilantro, chopped
1/2 cup low-fat cheddar cheese
1 hass avocado, cubed (optional)
Instructions:
In a crock pot layer the ingredients in the following order: onions, apples, beans, chicken, seasonings. Once layered, fill the crock pot with stock until it is half way up to the chicken. Cover it with a lid, and say bye bye for a few hours. If you want to leave it for 4-8 hours put it on low, for 4 hours minimum put it on high. Towards the end stir it once and cover it again.Once its cooked fold in the cheese and sprinkle with cilantro. If you like avocados, add a few on top of the chili when you serve it.
