I know that it can get hard to eat a protein, a carb, and a VEGGIE every 3 hours……..well at least the veggie part is hard……I hear it from my clients all the time. I don’t think it’s so much that it’s hard, but that people just don’t like eating veggies. With these fat burning recipes, you are going to start loving veggies. Fat Burning Recipes #1: Cashew Curry Asparagus
1 pound asparagus spears, trimmed
2 tablespoons cashews roughly chopped cashews
1/2 cup fat-free cottage cheese
1 teaspoon curry powder
1/2 teaspoon lemon juice
Pinch salt
Preheat oven to 425 degrees F. Line baking sheet with aluminum foil.
On baking sheet, line the trimmed asparagus. Season with salt and pepper, to taste. Toss together to evenly distribute oil and seasoning. Roast in oven for 8 to 10 minutes depending on the size of the asparagus. While asparagus is roasting, prepare dressing.
Process 2 tablespoons of cashews in a blender until finely ground, add cottage cheese, curry powder, lemon juice, and salt. Set aside. Drizzle on top of the asparagus and serve.
Fat Burning Recipes #2: Zucchini Boats
I
ngredients:
4 zucchini, halved lengthwise
½ red onion, chopped
3 plum tomatoes, chopped
1/3 cup sliced almonds (optional)
½ tsp dried oregano
6 ounces shredded fat-free mozzarella
¼ cup low sodium parmesan cheese (optional)
Instructions:
Preheat oven to 375 degrees. Using a small spoon, scoop out the zucchini flesh. Place the zucchini shells cut side down on a baking sheet and bake for 15 minutes. Meanwhile, in a skillet heat non-stick spray and add the zucchini flesh, and onion cook for about 5 minutes. Now add the tomatoes and cook another couple of minutes. Remove from heat and stir in the nuts and oregano. Flip the zucchini shells and line the bottoms with the mozzarella cheese. Pack in the veggie filling and sprinkle with a little parmesan. Bake until the zucchini is tender about 20-25 minutes.
