It’s all about setting your PRIORITIES straight.
I’m tired of hearing people complain as to why they don’t get results and why they “don’t have the time” to cook and eat healthy.
I am totally inspired by my clients Suzanne Bell and Rachel Ireland. They both did the LEAN & MEAN CHALLENG at BB3 Personal Training and Performance Center. They not only got incredible results, but the way they were able to focus and plan their days so that they had sufficient healthy meals available was amazing.
Suzanne is a busy mom of 2 very active boys who she takes to every practice and game they have. She is also CEO of her company, which takes much of her time and she is in the car all day with appointments anywhere from West Palm to Kendall. She trains 3 times a week and also takes GREAT care of her hubby Marc. Suzy cooks breakfast, lunch and dinner for her family every day.
You thought you had it hard huh? You thought you had all the great excuses huh? Well if Suzanne can find the time, so can you! I know I am totally inspired by her.
Rachel is a mother of 4 kids between ages 4 and 10, of which 2 are autistic. Her hubby travels a lot, and she doesn’t have much help. She is very involved with her husbands work, volunteering for meetings all the time. There are days that Rachel has 5 doctor appointments in one day. She wakes up at 4am and sometimes doesn’t sit down until 11pm. Rachel cooks breakfast, lunch and dinner for her family every day.
Both of these women are incredible and I hope their stories inspire you to stop making excuses and start making healthy meals for your family and yourself. For the last 12 weeks, these women planned, prepped, and cooked every healthy meal. They packed up food when they needed to and they made the best possible choices when out of town. I am so proud of them.
You see if you don’t make cooking and eating healthy meals a priority in your life, you will NEVER HAVE THE TIME FOR IT!
For me, it is a priority to feed my family and myself healthy meals. So even when I think I won’t be able to, I still do it.
The other day, Nicholas woke up early from his nap, which did not give me time to cook dinner. He wasn’t feeling too good so sitting in his high chair to watch a movie was not working. So right when I almost said “forget it I just don’t have the time tonight”……… I said…….” I can make this happen”. And so I did! Here are some pictures so that you can get the picture of what was going on in my kitchen.
Ok, so here you see a saute pan, baking sheets, muffin pans, Tupperware's, Nicholas' bottle, Nicholas' snack and water bottle. So you can imagine what was going on. Yes! I was cooking and feeding Nicholas at the same time.
Now you will see Nicholas making a mess in the kitchen while I cook, he opened all the cabinets, stuck his toys in them, etc. So I will have to clean up a little extra, but hey we will have a healthy dinner on the table. You will also notice the lid of a tupperware which I put on the floor with some grapes for him to eat. He was driving me crazy asking for more every 2 seconds while I was cooking. Hey a girl's gotta do what she's gotta do to get stuff done these days!
Now you will see my bowl. I was eating my snack (Turkey Apple Chili with Avocado....YUM), while I was cooking, feeding Nicholas and somehow entertaining him. You will see the recipe I was using as my inspiration for dinner that night.
And finally I will show you the end result! I made a delicious turkey sloppy joe and jasmine rice . I also made a healthy version of eggplant parmesan which was sooooo YUM. And since I had the oven on, I made my famous egg white and veggie quiches that I use as snacks. I did this all in like 30 minutes. Overwhelming??? YES just a tad as I was entertaining Nicholas, telling him NO every 2 seconds as he reached for my spice rack, fed him and fed myself all while cooking and cleaning. But I did it and at the end of the day, I felt happy that I had healthy food for my family and myself. And I also saved myself some time in the days to come as I made tons of food that will last me a few days.
