BeFit Moms Oatmeal Pancake: Heathy Snack

Moms are amazing jugglers.  We have to juggle so much all at once.  No wonder its so hard for us to be in shape, have energy and feel good about ourselves......  Most of the time we are busy doing everything for everyone else.

So since I know this, but I also know how important it is for you to eat every few hours to speed up your metabolism so that you can not only burn fat optimally but also have the energy to do everything you need to know, I have a great super healthy and super easy healthy snack recipe for you.

Its my famous BeFit Moms Oatmeal Pancake.  They are easy to make and you can make about 6 of them in 10 minutes, and you can store them in the fridge and have healthy snacks for all week.

BeFit Moms Oatmeal Pancake:

Ingredients:

1/2 cup oatmeal

1/4 cup low-fat cottage cheese

3 egg whites

1/4 banana or any fresh fruit

2 tbsp walnuts or almonds, chopped (optional)

Sweetener to taste:  Agave Nectar, Coconut Sugar, Stevia, Splenda

Cinnamon to taste

Instructions:

In a blender, blend all the ingredients (except if using any fruit other than banana, which you would fold in to the batter).  Cook on a small skillet at medium heat like a normal pancake.

Try this healthy snack recipe!  It will become a family staple, and the kids love them too!  My 2 year old son loves them.  Trust me I know how hard it is to juggle work, kids, hubby, and life itself.  But being in shape and feeling good about yourself will help you with all these things.
