6 Healthy Recipes to help you stick to it


Wedding Diet Healthy Recipe #1: Paprika Turkey Meatballs(4-6 Servings)

Ingredients:
2 onions, finely chopped
2 ribs celery, finely chopped
2 garlic cloves, finely chopped
One 14-ounce can diced tomatoes
One 12-ounce jar roasted peppers, drained
2 tbsp paprika
2 egg whites
¼ cup homemade Ezekiel Bread Crumbs or Whole-Wheat
1 package extra lean ground turkey breast
Salt and pepper to taste
Low sodium chicken stock for cooking.

Instructions:
• In a large skillet add chicken stock to medium heat.  Add the onions, celery and garlic and sauté until cooked.  Transfer a little over a cup of the onion mixture to a large bowl and let cool.
• In a food processor, puree the tomatoes and roasted peppers.  Add the puree to the skillet and bring to a boil over medium heat.  Stir in the paprika.  Add the mixture to a big pot and cook.
• Whisk the breadcrumbs, egg whites into the remaining onion mixture.  Mix in the turkey and form meatballs.  Add the meatballs to the pot and cook until done.

Wedding Diet Healthy Recipe #2:  Mashed Sweet Potato(4 Servings)

Ingredients:

3 sweet potatoes
½ cup starchy water
½ cup fat-free cottage cheese
½ cup fat-free shredded cheddar cheese
Cinnamon to taste-optional

Instructions:

• Peel and boil the sweet potatoes until soft.
• Cut the potatoes in chunks and place them in a food processor, add the starchy water, the cottage cheese and the shredded cheddar cheese and blend until smooth and creamy.

Wedding Diet Healthy Recipe #3:  Broccolini with Balsamic Vinaigrette(4 Servings)

Ingredients:
4 bunches broccolini (1 1/2 pounds)
1/4 cup good olive oil
11/2 tablespoons balsamic vinegar
1/2 teaspoon Dijon mustard
1 teaspoon minced garlic
1/2 teaspoon freshly ground black pepper
1 lemon

Instructions:
• In a large pot, bring 8 cups of water and a dash of salt to a boil. Remove and discard the bottom third of the broccolini stems.
• Meanwhile, in a small bowl, whisk together the olive oil, balsamic vinegar, mustard, garlic, 1 1/2 teaspoons salt, and the pepper.
• When the water comes to a full boil, add the broccolini, return to a boil, and cook over high heat for 2 minutes, until the stalks are just tender. Drain well and place in a large bowl.
• Pour enough dressing over the broccolini to moisten and toss well. Splash with a generous squeeze of fresh lemon juice.

Wedding Diet Healthy Recipe #4:  Morracan Tilapia with Mango relish(4 Servings)


Ingredients:
4 (5-ounce) tilapia fillets
Salt and ground black pepper
2 teaspoons ground cumin
2 teaspoons ground coriander
1 tablespoon olive oil
1 ripe mango, diced
1/4 cup chopped fresh cilantro leaves

Instructions:
• Season both sides of tilapia fillets with salt and black pepper. Rub cumin and coriander all over both sides of fillets.
• Heat chicken stock in a large skillet over medium heat. Add tilapia fillets and cook 3 to 5 minutes per side, until fish is fork-tender.
• Meanwhile, in a small bowl, combine mango and cilantro. Top tilapia with mango mixture just before serving.

Wedding Diet Healthy Recipe #5:  Arugula Salad with Palms, Artichokes and Citrus Dressing(6 Servings)

Ingredients:
1 bag of hearts of romaine
1 bag of arugula
1 15-ounce can hearts of palms, drained and chopped
1 15-ounce can artichoke hearts drained and chopped
¼ cup orange marmalade
1 lemon juiced
2 tsp Dijon Mustard
1/3 cup extra virgin olive oil
¼ cup toasted sliced almonds

Instructions:
• Arrange lettuces, and veggies in a platter.
• Combine marmalade, with lemon juice, mustard, salt and pepper to taste and whisk in olive oil.
• Pour dressing over salad and top with almonds.

Wedding Diet Healthy Recipe #6:  Quinoa Salad(4 servings)

Ingredients:

1 cup of Quinoa
Complete seasoning
½ jar of roasted peppers, chopped
¼ cup pine nuts, toasted
½ cup arugula, chopped
1/8 cup crumbled goat cheese

Instructions:

• Cook the Quinoa per instructions and add a dash of complete seasoning to the boiling water.
• Once cooked, add roasted peppers, pine nuts, arugula, and goat cheese crumbles.
• Mix well to combine and serve.
